INGREDIENTS GRILLED FOIE GRAS:

Fresh foie gras

Berry Fields tea

Honey

Sherry vinegar

Fresh berries

Coarse salt

HOW TO MAKE GRILLED FOIE GRAS:

Heat the pan without oil. Cut a portion of the foie gras and pan-fry it on both sides. Set aside.

Degrease the pan with kitchen paper.

Add a splash of vinegar. When almost all the vinegar has evaporated, add the tea and a little honey.

When it starts to boil again, taste it to check there is enough honey, the taste should be sweet and sour, if not, it can be rectified with more honey or vinegar. The sauce should end up a little thicker.

To serve, plate up the foie gras and pour the sauce over, adding a little coarse salt. Garnish with blueberries.
