INGREDIENTS - Melon Gazpacho:
1 melon (peeled and seeded)
1 peeled cucumber
3/4 cup of coconut water
1 natural yoghurt
1 tablespoon of honey
1/4 teaspoon of salt
1/4 teaspoon of nutmeg
2 teaspoons of paprika
2 teaspoons of Matcha Latte Melon Cucumber
Fresh mint leaves (for garnish)
PREPARATION – Melon Gazpacho:
4 steps to prepare a delicious melon gazpacho with beneficial properties for you:
Dice the melon and cucumber.
Place ¾ of the melon, ¾ of the cucumber and the yoghurt in a blender or mixer. The texture should be smooth.
Add the rest of the melon and cucumber, along with the paprika, nutmeg, salt, Matcha latte melon cucumber, honey and coconut water. Stir until the mixture is smooth.
Leave to cool in the fridge for at least an hour.
Garnish with mint and enjoy!
