Pumpkin sponge cake ingredients:

3 eggs

1 yoghurt

1 yoghurt pot measure of olive oil

2 yoghurt pot measures of sugar

3 yoghurt pot measures of flour

Grated zest of ½ a lemon

1 sachet of yeast

100 ml of warm water

20/30 g of Happy Pumpkin (concentrated and soaked the day before)

How do you make a pumpkin sponge cake?

Infuse and soak the Happy Pumpkin in 100 ml of water the day before.

Beat the eggs with the sugar, then add the yoghurt, oil and infused happy pumpkin, now cold.

Add the flour and yeast and mix well until the dough is homogeneous.

Place in a mould, pre-greased with butter to prevent it from sticking.

Bake for 40/45 minutes at 180º and decorate to taste!
