Spicy fairy cakes with matcha tea and turmeric
Here is our special version of a traditional dessert the whole family will love: our Fairy Cakes with Matcha Tea and Turmeric, which we make with our delicious Matcha Curcuma Latte.
This recipe combines the fluffy, spongy texture of fairy cakes with the distinctive taste of Matcha Tea and the spicy flavour of Turmeric (Curcuma) which has multiple health benefits!

Matcha powder has more than an incredible flavour that lends itself to a variety of recipes (cakes, sweets, smoothies …).
It is also an incredible source of minerals and antioxidants, essential to fight the action of free radicals and prevent cell damage.

In India, Turmeric (Curcuma), together with other Chai spices (cinnamon, clove, ginger, fennel, black pepper…) is an essential natural remedy in Ayurveda, one of the oldest traditional and holistic medicines in the world.
According to Ayurveda, each person is composed of 3 basic energies or dosha (called vata, pitta and kapha) in a unique combination.
Due to their digestive and curative properties, spices play a major role in maintaining the balance between these energies.
Often called the ´King of Spices´, with its high content of vitamins (C, E, K, B1, B2, B3, B6 y B9) and minerals (manganese, iron, potassium, calcium, magnesium, copper and y zinc), Turmeric has antioxidant, digestive and anti-inflammatory properties, especially effective at relieving joint pain.

Fairy Cakes with Matcha and Turmeric
INGREDIENTS
• 170 gr rice flour
• 1 sachet Baking Powder
• 30 gr Maizena (maize flour)
• 100 gr sugar
• 30 gr butter at room temperature
• 50 gr sunflower oil
• A pinch of salt
• 2gr Matcha Curcuma Latte
METHOD
1. In a bowl, put the eggs and sugar and beat with an electric whisk for 3 minutes until it has doubled in volume.
2. Add the butter and oil and mix until smooth.
3. In another bowl, mix the dry ingredients: rice flour, baking poder, Maizena, salt and the Matcha poder Matcha Curcuma Latte.
4. Add this mixture to the mix of wet ingredients. Whisk on medium speed until well combined, then whisk on high speed for another 1.5 minute.
5. Cover the mixture, place in the fridge and leave to set for at least one hour (overnight is recommended).
6. Preheat oven to 250ºC. Stir again the mixture with a hand-held manual whisk, and fill each fairy cake baking mould up to 1/3.
7. Lower oven temperature down to 210ºC and bake the fairy cakes for 14-16 minutes, then let them cool on a rack.
