CHOCOLATE MOUSSE WITH RED TEA PU ERH CHOCONOIR

INGREDIENTS (serves 4)

• 4 eggs

• 150g sugar

• orange juice, a few drops

• 200g chocolate for cooking

• 20g Pu Erh Choconoir tea

• 0,5l liquid cream


METHOD

1. Soak the tea leaves in cream and let macerate for 36 hours, stirring occasionally. After 36 hours, strain tea leaves.

2. Whisk the egg yolks in 120g sugar. Heat the chocolate until it melts and has a smooth creamy texture.

3. Add the mixture of egg yolks and sugar to the melted chocolate, and stir well while it cools down.

4. Whisk the egg whites until they form stiff peaks with a few drops of orange juice.

5. Add the egg whites to the cooled chocolate mixture and stir.

6. Whip the tea-flavoured cream with 30g of sugar, spoon into the mixture, stir, set in the fridge and allow to cool for at least 2 hours.

7. Fill a pastry bag with the mousse, fill ramekins or glasses, decorate with orange peel, and serve.
