This is one of our favourites among Matcha recipes.
This recipe combines the creaminess of cheesecake with the distinctive taste of Matcha Tea and the sweet and spicy flavours of cinnamon, cardamom and cloves, some of the traditional Chai spices which are so important in Indian culture and in Ayurveda - one of the oldest traditional and holistic medicines in the world.

The health benefits of Matcha and Chai Spices

Chai Spices (cinnamon, cardamom, cloves, turmeric, ginger, fennel, black pepper…) are fundamental in ayurvedic medicine.
According to Ayurveda, each human body is composed of 3 basic energies or dosha (called vata, pitta and kapha) in a unique combination.
Due to their digestive and curative properties, spices play a major role in maintaining the balance between these energies.
The Chai spices used in cooking or in Chai Teas regulate digestion, boost metabolism and enhance our absorption of beneficial nutrients, which helps prevent imbalance, discomfort or illness.
In order to enjoy the health benefits of both Matcha and Chai spices in our recipe, we use our special Matcha Latte Chai, a matcha powder with cinnamon, cardamom and cloves. Just irresistible!
Chai and Matcha Cheesecake
INGREDIENTS
• 2 tsp Matcha Latte Chai, + some to sprinkle over cake
• 80 gr. cream cheese
• 1/2 cup yoghurt
• 1/4 cup liquid cream
• 1 gelatine leave
• 1 pack of biscuits (Digestive type)
• 25 gr. butter, melted
• 1 cup sugar
METHOD
1. Put the gelatine sheet in a bowl of water (room temperature) and leave to soak.
2. Crush the biscuits into crumbs. Add the melted butter to the crumbs and stir. Pour into a 20 cm round pan and press firmly into the bottom with a spoon.
3. In a bowl, mix the cream cheese and the sugar and stir until smooth.
4. Add the Matcha Latte Chai powder, the yoghurt and the liquid cream, and stir. Add the gelatine to the mixture. Stir well.
Pour the mixture onto the biscuit crust, place pan in the fridge and leave to set for a few hours.5. Before serving, sprinkle with some Matcha powder.
