8 reasons to eat pumpkin: properties and benefits
Did you know... The pumpkin is a magical autumn fruit that has been prized since ancient times for its health-giving properties and its delicate and naturally sweet taste.
The properties of pumpkins
The properties of pumpkins are plentiful, providing essential vitamins and minerals with hardly any calories. Let’s take a look at some of the properties of pumpkins:
They have a high concentration of vitamins, especially beta-carotene (a vegetable pigment that acts as an antioxidant), helping us to produce provitamin A (essential for maintaining healthy skin) and the other two antioxidant vitamins, C and E.
Another of the properties of pumpkins is that they provide lycopene (which prevents cell degeneration and carcinogenic processes) and several B vitamins (B2 and B6 and folic acid).
They’re also extremely rich in minerals: potassium, phosphorus, magnesium, iron and zinc. Alongside being a low-calorie vegetable, it is one of the most medicinal foods in the garden.
The benefits of pumpkins:
There are a whole host of benefits enjoyed by eating pumpkins: for one, they're highly recommended during pregnancy and breastfeeding thanks to their high vitamin and mineral content. It’s also a good food for those with diabetes, as, although it's sweet, its sugars are absorbed slowly and don't overload the pancreas.
